Cheesy Italian Chicken & Avocado w/ Arugula Salad
Makes 4 servings
2 Chicken breasts, cut in half, pounded to even thickness
1/2c Shredded cheese of choice
3Tbs. Italian seasoning
1 Small avocado
4 c Arugula, or other green
2Tbs. Extra virgin olive oil (EVOO)
Salt & pepper, to taste
Preheat oven to 350F
Spray baking sheet with non-stick spray
Sprinkle chicken pieces with italian seasoning, salt & pepper
Bake @ 350 for 35minutes, until cooked through
Take out and top w/ shredded cheese & bake until cheese is melted
Top with sliced avocado
Serve on a bed of arugula and top with EVOO, salt & pepper
