Dietetic Intern Spotlight: Jericho Aznar
Meet Jericho Aznar, a graduate assistant with the Nourish Program and second-year dietetic intern at UTHealth Houston.
“For me, the Nourish Program filled a gap,” Jericho shares. “By the end of my undergraduate degree, I understood the why of nourishing food, but not the how.”
That question led him to the UTHealth Houston Dietetic Internship, where he found the opportunity to get his hands dirty—literally and figuratively.
“I wanted to learn what it takes to bring good food from seed to plate, and this program offered that hands-on experience.”
Jericho’s journey into gardening started with a small but meaningful gift: free native plants from the Texas Master Naturalists. “Once I saw how quickly they attracted bees, butterflies, and even blooms that opened at night, I realized how fascinating gardening can be,” he says. Now, he helps manage our Holistic Garden, using it as a teaching tool for our first-year dietetic interns.
As a graduate assistant, Jericho also works closely with our Culinary Dietitians in leading cooking classes and demonstrations in person and streamed virtually. Without students like Jericho, we would not be able to continue pursuing our mission of showing people how to grow, prepare, and promote food that encourages lifelong health and well-being.
