When a person has diabetes, the pancreas doesn’t make enough insulin or can’t use the insulin that it produces.
This leads to a sugar buildup in the blood stream, according to the Centers for Disease Control and Prevention. Left untreated, diabetes can cause serious health complications like heart disease, blindness, kidney failure and lower-extremity amputations.
“Eating foods high in fiber, such as vegetables, is great for people with diabetes because fiber slows glucose absorption, which helps improve blood sugar levels,” said Shannon Weston, certified diabetes educator for UTHealth’s School of Public Health. “Fiber can also help reduce cholesterol levels, which can improve heart health.”
